In the US, up to 80% of all lamb consumed is foreign lamb. But in the US there is a small network of family owned farms that produce exceptional lamb. One of those networks is based in Colorado and the result is a lamb producing industry that focuses on meat quality (unlike their Australian and New Zealander counterparts who tend to prioritize wool production).

With a mild flavor and its tender meat Colorado lamb has quickly gained noteriety among chefs across the US and has garnered a cult like following among foodies. The lamb are raised on pristine farmlands of Colorado where they feed on natural grass and graze on wild weeds and berries in the mountains surrounding the ranch.
